AVOCADO LIME CHICKEN

This delicious and tender lime chicken is topped with a creamy avocado topping. Avocados are a great source of healthy fat and are packed with micronutrients. This avocado topping is not only amazing over your chicken, but tastes great with your choice of broccoli, asparagus, brown rice, sweet potatoes, or zucchini noodles. Amazing grilled chicken recipe!

HEALTH BENEFITS OF AVOCADOS!

There is an ongoing debate over whether or not avocados are healthy for you since they are high in fat, but let me tell you, avocados are an amazing source of fat.

  • Avocados are high in monounsaturated fat (the good stuff), and low in saturated fats, cholesterol and sodium. Being high in monounsaturated fats makes them HEART HEALTHY!

  • They are a great source of potassium which is a nutrient that many people struggle to get enough of.

  • Avocados are a great source of vitamins E and K (associated with reduced inflammation), folate, vitamin C, and B vitamins.

  • Surprisingly, they are high in fiber! Fiber is another great nutrient that will keep you HEART and GUT BACTERIA running properly!

    • In 1 cup of avocado there is 10 grams of fiber. The American Heart association recommends we should get 25-30g of fiber a day, where as most adults are getting only 15g per day. Eat more avocados!

INGREDIENTS

Chicken Marinade
1 lb chicken breast
2 tbsp olive oil
1/4 cup lime juice (juice of 2 limes)
1 tsp cumin
Salt and pepper, to taste
1/4 cup cilantro, chopped

Avocado Topping
2 avocados, diced
2 tbsp lime juice
1/4 cup cilantro, chopped
2 tsp red wine vinegar
1/4 tsp red pepper flakes
1 tsp garlic, minced
Salt and pepper, to taste


To serve (optional): your choice of brown rice, broccoli, asparagus, sweet potatoes, or zucchini noodles.

INSTRUCTIONS

  1. Start with the chicken marinade. In a gallon size plastic bag, combine chicken, olive oil, lime juice, cumin, salt and pepper, and chopped cilantro. Let the chicken sit in the marinade for at least 15-30 minutes.

  2. While marinating, make the avocado salsa. In a small bowl, combine avocado, lime juice, cilantro, red wine vinegar, red pepper flakes, garlic, and salt and pepper. Stir gently, trying not to completely smoosh all avocado pieces.

  3. Next, grill the chicken over medium-high heat. Cook each side for 7-8 minutes, or until it reaches 165 F degrees.

  4. Take the chicken off the grill, top with avocado salsa, and pair with any other desired sides. I love eating this chicken with brown rice, broccoli, asparagus, sweet potatoes, or zucchini noodles. Enjoy!
