BAKED TURKEY MEATBALLS

If you are looking for a quick, easy and healthy lunch, after-school snack for the kids or protein to go with your dinner, this is the recipe for you! Try one, two or all of the different meatball flavors. My personal favorite is the Thai! I love these meatballs over a salad, cauliflower rice, Thai cabbage salad, in a pita pocket with Tzatziki Sauce, or quickly thrown on top of brown rice or quinoa, and a side of broccoli. Make a big batch and store in the freezer. I promise they will get eaten!

INGREDIENTS

THAI MEATBALLS (my favorite!)

1 lb. ground turkey
1/2 cup breadcrumbs
1 egg
2 tsp worcestershire sauce
1/2 tsp salt
2 Tbsp Thai red curry paste
1 tsp brown sugar
1 tsp fish sauce

GREEK MEATBALLS

1 lb. ground turkey
1/2 cup breadcrumbs
1 egg
2 tsp worcestershire sauce
1/2 tsp salt
2 tsp minced garlic (4 cloves)
2 tsp  dried oregano
Zest of 1 large lemon
1/2 cup feta cheese

ITALIAN MEATBALLS

1 lb. ground turkey
1/2 cup breadcrumbs
1 egg
2 tsp worcestershire sauce
1/2 tsp salt
2 tsp dried basil
2 tsp dried oregano
1/4-1/2 cup shredded parmesan

MEXICAN MEATBALLS

1 lb. ground turkey
1/2 cup breadcrumbs
1 egg
2 tsp worcestershire sauce
1/2 tsp salt
3 Tbsp. taco seasoning
INSTRUCTIONS

  1. Preheat oven to 375 F degrees. Line baking sheet with parchment paper or tin foil and set aside.

  2. In a mixing bowl combine all ingredients-ground turkey, breadcrumbs, egg, Worcestershire sauce, salt, and other ingredients for specific meatball flavor. Use your hands to combine ingredients evenly. 

  3. Scoop meat into 1 -2 tablespoon balls and place on baking sheet 1" apart. 

  4. Bake for 20-22 minutes or until they reach 165°F, or until cooked thoroughly. Cooking times may vary, so best if you temp the meatballs a few times while baking.

  5. Enjoy over rice, salad, cooked vegetables or pasta!

*TO EAT LATER: If you're not planning to eat them the same day, freeze meatballs on a baking sheet, 1" apart. Transfer frozen meatballs to plastic freezer bags and store until ready to eat. When ready to eat, bake frozen meatballs for 25-30 minutes at 375°F, or until cooked thoroughly. Cooking times may vary, so best if you temp the meatballs a few times while baking.
