BEEF BULGOGI KOREAN LETTUCE WRAPS
This quick Korean Beef is one of my go-to recipes. Wrapped in lettuce or served over some brown rice and paired with the sesame cucumber topping, this asian dish is quick and yummy!
INGREDIENTS
Korean Beef
1 lb lean ground beef
1 tbsp olive oil
2 tsp garlic, minced
⅓ cup soy sauce
1 tsp brown sugar
½ tsp red chilli pepper flakes
½ tsp ground ginger, or 1 tsp fresh grated ginger
1 tsp cornstarch
Topping (optional, but recommended)
1 tbsp sesame seeds
2 green onions, chopped
Sesame Cucumber Salad
1 ½ tbsp sesame oil
2 tbsp rice vinegar
1 tsp sugar
1 cup cucumber, cut into matchsticks
1 cup radishes, sliced
½ cup red onion, chopped
½ cup bean sprouts
INSTRUCTIONS
In a small bowl, mix soy sauce, brown sugar, red chili pepper flakes, ginger and cornstarch. Set aside for later.
In another small bowl, mix together the cut cucumbers, radishes, red onions, and bean sprouts, along with the sesame oil, rice vinegar and sugar. Stir and set aside.
In a skillet, head olive oil to medium heat. Saute the ground beef with the garlic until brown. Drain the excess grease.
Add the sauce (made in step 1) and cook for 5 more minutes, Stir until well coated.
Serve as lettuce wraps, or rice bowl and top with the sesame cucumber salad.
