CHICKEN SHAWARMA PITA

This easy chicken shawarma recipe is as delicious as it is flavorful. Rich spices make a great middle eastern taste, while the lemon gives it the perfect tangy contrast. Great low-carb chicken, topped with your favorite toppings. Tzatziki Sauce (see below) or Spicy Feta are two of my favorites. Enjoy in a pita or over a bowl or rice or quinoa.

INGREDIENTS

Chicken

1 lb grilled chicken
3 tbsp olive oil
Juice of 1 lemon
2 tsp garlic, minced
1 tbsp honey
1 tsp paprika
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp oregano
1/2 tsp turmeric
1 tsp salt
1/2 tsp pepper
Dash of cayenne pepper

To serve:

Whole wheat pita bread
Lettuce, chopped
Cucumber, sliced
Tomatoes, sliced
Red onion, sliced

Tzatziki Sauce

3/4 cup greek yogurt
Juice of 1 lemon
1/2 cup chopped cucumber
1 tsp olive oil
1/2 tsp dried dill weed
Salt and pepper, to taste

INSTRUCTIONS

  1. Start by preparing the marinade. In a gallon size plastic bag combine all chicken ingredients -chicken breasts, olive oil, lemon juice, garlic, honey, paprika, cumin, cinnamon, ginger, oregano, turmeric, salt, pepper, and cayenne pepper. Refrigerate for 30 minutes or more.

  2. Next, prepare the Tzatziki sauce. While the chicken is marinating, chop the vegetables-lettuce, cucumber, tomatoes, and red onion. In a small bowl, combine all ingredients-greek yogurt, lemon juice, chopped cucumber, olive oil, dill weed, salt, and pepper. Set aside

  3. Over medium-high heat, grill the chicken breasts for 15-20 minutes (7-10 minutes on each side).

  4. To serve, prepare pita (or rice/quinoa bowl if preferred) by topping with fresh veggies, chicken, and tzatziki sauce. Enjoy!!
