FLAX + OATMEAL CHOCOLATE CHIP COOKIES
This is my all time favorite healthy cookie! They taste just as good as normal chocolate chip cookies but are made with oat flour and flax seed meal. If they don't turn out the first time, don't give up! It's taken me many tries to get them perfect, but you won't regret it!
INGREDIENTS
1 cup oat flour (finely ground rolled oats)
1 cup whole rolled oats
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
6 tbsp melted coconut oil
1/4 cup coconut sugar (or brown sugar)
1/4 cup pure maple syrup
2 flax eggs (2 tbsps ground flaxseed + 5 tablespoon water. Let sit for 15 min-this is key! If you don't wait long enough the cookies will fall apart)
1 tsp. vanilla extract
1/2 -1 cup vegan chocolate chips (as desired)
INSTRUCTIONS
1. Preheat oven to 350°F. Spray cookie sheet with cooking spray or line with parchment paper.
2. In a small bowl, mix together the 2 flax eggs (2 tbsp flaxseed + 5 tbsp water) and set aside for later use.
3. In a medium bowl, whisk together all the dry ingredients: oat flour, oats, baking powder, baking soda, cinnamon and salt.
4. In a large bowl, whisk together all the wet ingredients: coconut oil, coconut sugar, maple syrup, vanilla, flax eggs (previously made), and the chocolate chips. Mix thoroughly.
5. Add the dry ingredients to the wet ingredients. Whisk until thoroughly combined, slightly lumpy.
6. Scoop cookie dough onto the prepared cookie sheet and roll into approximately 2 tbsp balls.
7. Bake for 8-12 minutes. Cool on cooling rack for 5 minutes and enjoy!
