GREEK RED CABBAGE SALAD
This healthy Greek red cabbage salad is full of nutritious vegetables and healthy sources of fat. The Greek grilled chicken marinade is fresh and tangy. Loaded with a cabbage base, this salad boosts antioxidants, vitamin C, anti-inflammatories, vitamin K, and fiber. INGREDIENTS
Greek Chicken Marinade
1 lb chicken breast, cubed
3 tbsp olive oil
1 tbsp lemon juice
1 tbsp balsamic vinegar
2 tsp garlic, minced
1 tsp oregano
1/2 tsp cumin
1/2 tsp basil
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
Cabbage Salad
4 cups red cabbage, thinly sliced and chopped small
1 cup chopped red bell pepper
1/2 cucumber, chopped or sliced
1 cup diced tomatoes
1/4 cup feta cheese, crumbled
Dressing: top with Tzatziki sauce, hummus, or balsamic vinegar
INSTRUCTIONS
Prepare the chicken marinade. In a gallon size plastic bag combine chicken, olive oil, lemon juice, balsamic vinegar, garlic, oregano, cumin, basil, onion powder, salt, pepper, and paprika. Let marinade in the fridge for 30+ minutes.
Prepare the chopped vegetables and combine all -cabbage, red bell pepper, cucumber, and tomatoes - in a large bowl.
Next, heat up a large skillet over medium-high heat, then add the chicken to the skillet. Cook chicken, stirring frequently, for 7-10 minutes or until they reach 165 F degrees.
Add the chicken to the salad, top with feta cheese and dressing, if desired. Enjoy!
