HIGH PROTEIN CHICKEN SALAD

Chicken Salad is a typical brunch or yummy lunch recipe, but this chicken salad replaces mayo for greek yogurt. Healthy, higher in protein, and lower in fat. The chopped apples and grapes give a good crunch and a little bit of sweetness. Quick, go-to lunch recipe that you can make in just a few minutes. I especially love this chicken salad when served in a whole wheat pita pocket.

INGREDIENTS
1 lb canned chicken, or pulled rotisserie chicken
2/3 cup plain 0% fat Greek yogurt
1/2 cup chopped red onion
1/2 cup chopped apple
1/2 cup halved grapes
1/2 tsp garlic powder
2 tsp lemon juice
Salt and pepper, to taste

To serve: serve in whole wheat pita pockets, sliced bread, in a lettuce wrap, or eaten plain

INSTRUCTIONS

  1. In a medium size bowl, combine the chicken, yogurt, red onion, apple, grapes, garlic powder, salt and pepper.

  2. Serve over your choice of bread, lettuce, crackers, or eaten plain. Enjoy!
