GRILLED CHICKEN FAJITAS

This recipe is easy and one of my favorite Mexican dishes! Delicious and flavorful tender chicken topped with your choice of salsa, pico or guacamole This versatile meal is one that the whole family will love, and can be eaten in a variety of ways - as a salad, in tortilla shells, or made as a rice bowl. Recipes for my favorite salsa, pico or guacamole can be found here.

INGREDIENTS

Chicken Marinade

3 tbsp lime juice
3 tbsp pineapple juice OR orange juice OR grapefruit juice
2 tbsp olive oil
2 tbsp Worcestershire sauce
1 tbsp garlic, minced
2 tsp ground cumin
2 tsp chili powder
1 tsp paprika
2 tbsp cilantro, chopped
1 lb. chicken breast

Fajitas

2 bell peppers (any color), sliced into strips
1/2 yellow onion, thinly sliced

To serve: tortillas (my favorite are Mission Carb Balance Street Tacos), guacamole, salsa, greek yogurt (in place of sour cream), lime cilantro rice, cauliflower rice, lettuce, shredded cheese, etc.


INSTRUCTIONS

  1. Start with the chicken marinade. In a gallon size plastic bag, combine all marinade ingredients - lime juice, fruit juice (pineapple, orange or grapefruit), olive oil, worcestershire sauce, garlic, cumin, chili powder, paprika, cilantro, and chicken breast. Set in the fridge for 30 min-6 hours.

  2. Next, cook the chicken.

    If baking, place chicken, bell peppers, and onion on a sheet pan covered with tin foil. Bake at 425 F degrees for 25 minutes.

    If grilling, grill the chicken on high heat for 15 minutes.

    If cooking in a skillet or cast iron pan, turn on to high heat and let the pan heat up for a couple of minutes. Next, drizzle the pan with 1 tsp of olive oil, add the chicken to the pan and cook for 3-5 minutes. Then add fajita veggies-onions and bell peppers. Cook for another 3 minutes, or until the chicken reaches internal temperature of 165 F degrees.

  3. Prepare any additional sides.

  4. Assemble: Serve the fajitas with your choice of toppings (see the ideas under ingredients).
