PINEAPPLE GRILLED CHICKEN

One of my favorite summer recipes! Easy, slightly sweet. and a quick weeknight recipe. Not only does a lot of the flavor come from the naturally sweet pineapple juice, but it makes the chicken extra tender. This recipe can be grilled, baked, or sautéed, and can be eaten over rice, cauliflower rice, in lettuce wraps or over a bed of mixed greens. However you choose to eat it, make sure to top with grilled pineapple slices. Yum!

INGREDIENTS
1 lb chicken breast
1/4 cup soy sauce
1/4 cup pineapple juice
1/4 cup water
3 tbsp tomato paste
2 tsp garlic
2 tsp chili powder
1 tsp paprika
1 can pineapple slices or fresh pineapple, sliced
To serve: Brown rice, cauliflower rice, mixed greens

INSTRUCTIONS

  1. In a large plastic bag or baking dish combine chicken breast, and the rest of the marinade ingredients-soy sauce, pineapple juice, water, tomato paste, garlic, chili powder, and paprika. Everything except the pineapple slices.

  2. Cook the chicken in one of the following methods:

    1. Grill: over high heat, grill the chicken breasts for about 10 minutes on each side, or 20-22 minutes total. Grill the pineapple slices as well, and serve with the chicken.

    2. Bake: Bake the chicken and the pineapple slices at 375 F degrees for 40-45 minutes, or until reaches 165 F degrees, or cooked all the way through.

    3. Saute: In a skillet pan over medium-high heat, drizzle 2 tbsp olive oil. Saute the chicken for 7-10 minutes on each side, or until cooked thoroughly. Saute the pineapple slices for 2 minutes, or until golden.

  3. Serve grilled chicken and pineapple over your choice of rice, cauliflower rice, or mixed greens. Enjoy!
