HEALTHY CHICKPEA BLONDIES
This healthy cookie bar (blondie), made from chickpeas, is one of my favorite treats. Just enough sweet to fill your sweet tooth but made with natural sugars and healthy chickpeas. Best when eaten warm with a glass of milk or almond milk!
INGREDIENTS
1 can chickpeas, rinsed
1/3 cup peanut butter
1/3 cup maple syrup
1 tsp vanilla extract
1 tsp baking soda
1 tsp cinnamon
1 egg
1 cup rolled oats
1/3 cup chocolate chips
INSTRUCTIONS
Preheat your oven to 350 F degrees and spray and 8x8 baking dish with cooking spray.
In a blender, add chickpeas, peanut butter, maple syrup, vanilla extract, baking soda, and cinnamon. Blend until smooth.
Next, add egg and oats to the mixture and pulse until oats are evenly mixed in.
Stir in chocolate chips with a spatula, then pour mixture into prepared baking dish. Top with a few more chocolate chips.
Bake for 20-25 minutes, or until a toothpick comes our clean.
Let cool, cut and enjoy!
