HEALTHY COCONUT MACROONS

These naturally sweet cookies, made with unsweetened coconut and almond flour, dipped in a little chocolate, tastes just like a traditional coconut macaroon cookie. A sweet crunch that is healthy and clean.

INGREDIENTS

1 cup unsweetened shredded coconut
1/2 cup almond flour
1/4 cup pure maple syrup
3 tbsp melted coconut oil
1 tsp vanilla
1/4 tsp salt
1/3 cup chocolate chips + melted coconut oil

INSTRUCTIONS

  1. Preheat oven to 300 F degrees

  2. In a medium bowl, stir together unsweetened coconut, almond flour, maple syrup, coconut oil, vanilla, and sea salt. Stir until combined.

  3. Use a tablespoon to scoop batter onto a baking sheet lined with parchment paper.

  4. Bake for 22-25 minutes. Remove from the oven and let them cool completely.

  5. Melt chocolate chips and 1 -2 tsp of coconut oil in the microwave for 1-2 minutes, stirring every 30 seconds. Dip each macaroon into the melted chocolate, or drizzle on top. Enjoy!
