HEALTHY TORTELLINI SOUP
This creamy tortellini soup is a family favorite! Warm and creamy soup perfect for a cozy night at home. Balanced meal with lean protein, tortellini pasta and loaded with spinach. Made in just 30 minutes and super easy!
INGREDIENTS
1 lb. ground turkey
1 tbsp olive oil
2 tbsp garlic, minced
1 small yellow onion, diced
1/2 cup carrots, chopped
3 tsp Italian seasoning
salt and pepper, to taste
2 tbsp all-purpose flour
4 cups chicken stock
1 (8oz) can tomato sauce
1 (90z) package of three cheese tortellini
2 cups spinach, chopped
1/4 cup half and half
INSTRUCTIONS
1. In a large stockpot, heat olive oil over medium heat. Add ground turkey, garlic, yellow onion, carrots, and Italian seasoning. Cooking 5-7 minutes, or until browned. Drain excess fat.
2. Whisk in the flour and stir for 1 minute, or until lightly browned.
3. Next, whisk in chicken stock and tomato sauce. Bring mixture to a boil, then reduce heat and simmer, about 10 minutes.
4. Stir in tortellini, cover and cook for 5-7 more minutes.
5. Stir in spinach and half and half, add salt and pepper to taste. Enjoy!!
