Mediterranean Stuffed Burgers
These burgers are made with ground turkey but flavored with an array of Mediterranean seasonings. Between the Italian seasoning, chopped fresh vegetables, and feta cheese, this recipe is packed with flavor and a variety of micronutrients. These burgers can be eaten with a bun, as a lettuce wrap, or just alongside some roasted sweet potatoes. Perfect for summertime grilling! Burgers
1 lb ground turkey
1 large egg
1/4 cup bread crumbs
1 tbsp garlic, minced
½ cup bell pepper (any color), chopped
½ cup spinach, chopped
¼ cup feta cheese, reduced fat
¼ cup onion (any color), chopped
1 tbsp Italian seasoning
½ tsp red chili pepper flakes
½ tsp salt
½ tsp black pepper
INSTRUCTIONS
In a large mixing bowl combine all the “burger” ingredients - ground turkey, egg, bread crumbs, garlic, bell pepper, spinach, feta, onion, Italian seasoning, red chili pepper flakes, salt, and pepper. Mix thoroughly with hands, then shape into 6 equal burger patties.
Prepare your grill (preferred method), griddle or skillet to medium-high heat. Once hot, place the prepared burgers on your grill (or other cooking method) and cook for 10-15 minutes, or until reaches 165 F degrees. *Time will depend on your cooking method so keep an eye on internal temperature.
Once cooked through, serve burgers on your choice of bun, lettuce wrap, or with your favorite sides. Enjoy!
