BAKED COCONUT FRENCH TOAST
This baked french toast is delicious! Top with fresh berries and unsweetened coconut, if desired. Fluffy french toast with a yummy coconut flavor. Healthy and easy to make, it’s the perfect recipe for a weekend brunch.
INGREDIENTS
1 package King’s Hawaiian Original Rolls (12 pack)
1 can lite coconut milk
1 cup Fairlife milk (ultra-filtered, high protein milk)
1/2 cup egg whites
2 tsp vanilla extract
1/2 tsp cinnamon
1/4 cup unsweetened shredded coconut
Optional toppings: berries, bananas, powdered sugar, etc.
INSTRUCTIONS
Preheat the oven to 350 F degrees and prepare a 9x13 baking dish by spraying with cooking spray.
Tear the Hawaiian rolls into small, bite-size pieces and arrange in the prepared baking dish.
In a medium size bowl, whisk together the coconut milk, Fairlife milk, egg whites, vanilla, and cinnamon. Whisk until well combined. Pour the mixture over the bread. Then, sprinkle with unsweetened shredded coconut.
Bake for 40-45 minutes. If the top starts to burn, cover with tin foil and continue cooking for the full time. When fully cooked the french toast should not jiggle when moved, and should be puffy on top.
Optional: top with preferred toppings (yogurt, nut butters, syrups, etc.). My favorite is fresh berries. Enjoy!!
