FETA RED PEPPER DIP

I am always on the hunt for healthy places to eat out! Recently I found a Greek restaurant that had a spicy feta red pepper dip on their menu. It was SO good, I couldn’t wait to get home and try to create my own version of this dip. After a few trial runs, I finally think it is perfect!

This Spicy Feta Red Pepper Dip is an amazing addition to a simple, healthy Greek meal, but it is also a party-favorite. Whether you are serving on top of chicken shawarma or with chips as a side dish, it will be crowd pleaser! The roasted red peppers bring out a delicious flavor in the cheese. Not only is this recipe delicious but it only takes a few minutes. Enjoy!

Tips for making this Feta Red Pepper Dip:

  • Food Processor: When I first started testing this recipe I was using a food processor. I didn’t love the one I had an ended up returning it. Since then I have made it by pulsing it in a blender. Although it is maybe a little more difficult, it still works great! Keep blending until it is smooth. Be patient with this step!

  • Block or crumbed? This does not matter! I’ve found that the block usually blends a little better because it is more wet, but both will work!

  • Red peppers? If you can find canned roasted red peppers at the store, those will also work. I prefer to roast my own fresh so that I can avoid the extra preservatives and sodium!

  • Eat with? You can eat this dip with just about anything! The first time I tried it, I ate it with pita chips. Amazing! Since then, I have tried it with just about anything! INGREDIENTS

4 oz feta cheese
1 small red pepper, sliced and roasted (you ca buy roasted peppers in a jar or roast fresh)
1 1/2 tbsp olive oil
1 tsp garlic minced
1/4 tsp red pepper flakes

INSTRUCTIONS

  1. If you are using fresh red pepper: Slice bell pepper into 1” thick strips. Saute on high-heat with NO OIL, until the pepper slices start to blacken.

  2. In a food processor or a blender, combine all ingredients, including the roasted bell peppers prepared in step 1. Pulse until all ingredients are broken down and mixed together.

  3. Serve on top of Chicken Shawarma, Mediterranean Burgers, over a greek salad, or with pita bread. Enjoy!
