PEANUT BUTTER RICE KRISPIE TREATS
I love these Healthy Rice Peanut Butter Rice Krispie Treats! They are made with brown rice cereal and peanut butter and of course, covered in dark chocolate. These rice krispie treats are a good source of whole grains and are a treat that your kids will love. Get ready to add a sweet crunch to your day!
INGREDIENTS
Bars
3/4 cup natural peanut butter (creamy)
1/3 cup pure maple syrup
2 tbsp coconut oil
2 tsp vanilla extract
1 scoop protein powder (flavor of choice)
2 cups brown rice cereal
Chocolate Top:
4 oz dark chocolate chips
2 tsp coconut oil
INSTRUCTIONS
Spray a 8x8 inch pan with nonstick cooking spray, or line with parchment paper. Set aside.
In a medium size pot, add peanut butter, maple syrup, coconut oil, and vanilla. Heat over low heat for 1-2 minutes, or until smooth and well combined.
Remove the pot from the heat. Mix in protein powder, stir until combined. Next, mix in brown rice cereal and combine. Pour into the prepared pan from step one and pat down with a spatula until leveled.
Rinse out the pot used in step 3. Return pot to low heat and add chocolate chips and coconut oil. Stir until completely melted. Be sure not to let it burn!
Pour melted chocolate on top of the rice krispie bars and spread with a spatula. Top with sea salt, if desired.
Place rice krispies in the fridge for 15-30 minutes, or until the chocolate hardens. Cut into 12 bars. Enjoy!
