GRILLED COPYCAT CHICK-FIL-A NUGGETS
Who doesn’t love Chick-fil-A? Their grilled nuggets are healthy, clean, and delicious! The ingredients on this recipe will surprise you, but will have you feel like you are eating right inside of Chick-fil-A. Enjoy these nuggets with your choice of honey mustard sauce (see below), ketchup, mustard, or any other preferred condiments. I love eating these nuggets over a bed of salad-balances out the salty chicken nuggets with some cool and crispy lettuce.
INSTANT POT GROUND BEEF GYROS
I am a huge fan of Greek food! Everything from the flavors, the spices, the fresh vegetables topped on every salad or gyros, to the Greek yogurt Tzatziki dressing, it all tastes so fresh! This recipe uses something so simply, ground beef, and turns it into a delicious lamb-like meat that you can top on a Greek salad, make into a gyro, or even eat as a lettuce wrap. This recipe is quick, easy, and is a good way to feed fresh vegetables to your kids in a way they will like them.
SALMON TACOS
Grilled salmon, peach salsa, and fresh cabbage slaw, can it get more summer than this?? This baked salmon recipe is moist, flavorful, and delicious served in a tortilla or over salad. The salmon will give you a good source of omega-3s, the whole wheat tortillas have a serving of whole grains, and the cabbage a source of anti-inflammatories. Peach salsa is good on just about about anything.

This Indian tandoori chicken is made with a variety of delicious spices and perfect when eaten with just about anything. A unique and flavorful combination. I love this lime cilantro coconut rice. Together, this is a delicious combo that is easy to make, fairly quick, and a different kind of spice than you typically use. Enjoy!
PINEAPPLE GRILLED CHICKEN
One of my favorite summer recipes! Easy, slightly sweet. and a quick weeknight recipe. Not only does a lot of the flavor come from the naturally sweet pineapple juice, but it makes the chicken extra tender. This recipe can be grilled, baked, or sautéed, and can be eaten over rice, cauliflower rice, in lettuce wraps or over a bed of mixed greens. However you choose to eat it, make sure to top with grilled pineapple slices. Yum!
COCONUT CRUSTED CHICKEN + HONEY MUSTARD SAUCE
This coconut crusted chicken is light, healthy, and delicious. The unsweetened coconut gives the chicken a good flavor and makes you feel like you are eating breaded chicken. Try this coconut chicken with this honey mustard sauce and you will feel like you are eating a tropical meal!
HIGH PROTEIN CHICKEN SALAD
Chicken Salad is a typical brunch or yummy lunch recipe, but this chicken salad replaces mayo for greek yogurt. Healthy, higher in protein, and lower in fat. The chopped apples and grapes give a good crunch and a little bit of sweetness. Quick, go-to lunch recipe that you can make in just a few minutes. I especially love this chicken salad when served in a whole wheat pita pocket.
