PEACH CAPRESE CHICKEN
Peaches in your oatmeal for breakfast, peaches on your spinach salad for lunch, and peaches for dinner, when is it not time for a good peach?! I am a peach lover, and therefore I am always looking for new ways to use peaches. This grilled chicken, topped with mozzarella cheese and grilled peaches, makes for a flavorful, delicious, and healthy dinner. After eating this chicken not only will it satisfy your sweet tooth, but you will feel healthy and energized! This is one of my favorites of this week, and I already am looking forward to making it again! DELICIOUS!
PEACH CAPRESE CHICKEN
Ingredients:
- 1 1/2 lbs chicken breast, sliced in half
- 3 tbsp olive oil
- 2 tsp lime juice
- 1 tsp salt
- 1/2 tsp black pepper
- 6 oz mozzarella cheese
- 3 fresh peaches, sliced
- 6 tbsp balsamic glaze (I buy mine at Trader Joe’s)
- 2 tbsp fresh basil, chopped
- To serve: Grilled or baked asparagus or summer squash, and sweet potatoes, corn, or brown rice
Instructions:
- In a gallon size plastic bag, combine sliced chicken breasts, olive oil, lime juice, salt, and pepper. Rub around for a few minutes, and let the chicken sit in the fridge for 5-10 minutes.
- If grilling or baking your vegetables, season with cooking spray, salt, and pepper. Bake on 400 F degrees for 15 minutes, or grill on high heat until soft.
- Over high heat, grill the chicken breasts for 6-8 minutes, each side, flipping in between.
- Add the peach slices to the grill, and grill for 2-3 minutes.
- Once the chicken reaches 145 F degrees, add the mozzarella cheese and let it melt while continuing to cook, or until it reaches 165 F degrees.
- Take the chicken off, serve with grilled peaches, 1 tbsp balsamic glaze on each chicken piece, and top with chopped basil. Enjoy!!
