BRUSCHETTA CHICKEN
This chicken is not only tasty and fresh, but it is super clean and can be made in less than 30 minutes. The bruschetta topping - a mixture of fresh tomatoes, basil, garlic, and spices - is the perfect addition to a clean piece of grilled chicken. Eat with your favorite sides, veggies, or carbs. Personally, I love sweet potato fries or brown rice, and a bunch of asparagus spears. This tomato basil topping will have your mouth watering all week!
INGREDIENTS
Chicken
1 lb chicken breasts
1 tbsp olive oil
1 tbsp Italian seasoning
2 tsp garlic, minced
½ tsp salt
½ tsp black pepper
Tomato Basil Topping
2 cups tomatoes, diced (3-4 roma tomatoes)
2 tsp garlic, minced
1 ½ tbsp olive oil
1 ½ tbsp balsamic vinegar
1 tbsp dried basil OR 3 tbsp fresh basil or mint
½ tsp salt
½ tsp black pepper
4 tbsp balsamic glaze, store bought (optional)
INSTRUCTIONS
Prepare the chicken breasts to be grilled or baked. In a gallon size plastic bag, combine chicken breasts, olive oil, Italian seasoning, garlic, salt and pepper. Set aside.
In a medium bowl, combine all tomato topping ingredients-tomatoes, garlic, olive oil, balsamic vinegar, fresh and dried basil/mint, salt and pepper. Set aside.
If grilling, grill on med-high heat for 6-8 minutes or until it reaches 165 F degrees. If baking, bake at 425 F degrees for 20-25 minutes.
Top each piece of chicken with ⅛-¼ cup tomato basil topping, and drizzle with balsamic glaze (optional).
