HEALTHY ALMOND BREADED CHICKEN NUGGETS
These healthy baked chicken nuggets are tender, flavorful, and will make you forget you are eating healthy. Buffalo flavored and breaded with almond flour. Low in carbs and high in protein. Healthy meal that the adults, and your kids, will love! I also love making this meal for meal prep. Healthy chicken nuggets all week long!
INGREDIENTS
Chicken Nuggets
1 lb chicken breasts, cut into bite sized “nuggets”
2 eggs
1 1/4 cup almond flour
1/2 tsp garlic powder
1 tsp paprika
1/2 tsp cayenne pepper
1 tsp salt
1/4 tsp pepper
1/2 cup buffalo sauce (your choice)
Broccoli
3 cup broccoli, cut into bite size pieces
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
INSTRUCTIONS
Preheat oven to 450 F degrees. Prepare a baking sheet with tin foil and spray with cooking spray.
In a large mixing bowl, mix together the almond flour, garlic powder, paprika, cayenne pepper, salt, and pepper. Set aside.
In a small bowl, whisk the eggs. Set aside.
Cut the broccoli into bite sized pieces. Drizzle with olive oil, then sprinkle garlic powder, paprika, salt, and pepper on top. Toss until combined. Place on 1/2 of the baking sheet.
Next, prepare the chicken nuggets. Dip each piece of chicken in the egg, then let the excess drip off. Next, roll the egg covered chicken piece in almond flour mixture, then lay them on the other half of the baking sheet. Use one hand for the egg and one hand for the almond flour, not mixing the two.
Bake nuggets for 10-12 minutes. Remove from the oven, flip them over and baking for another 15 minutes.
Dip nuggets in buffalo sauce and enjoy!!
