PROTEIN PACKED GERMAN PANCAKES
This healthy german pancake recipe is one of my very favorite breakfast recipes. Fluffy german pancakes made with Kodiak Cakes mix, Fairlife milk, and egg whites makes for the perfect protein packed breakfast. Delicious when topped with fresh berries and sugar-free syrup. This is the type of meal that you feel like is a special weekend treat, yet it is healthy enough to eat any day of the week. YUM!
Tips for making Protein Packed German Pancakes:
Milk: I really like using Fairlife milk because it is higher in protein, ultra-filtered and adds just a few more grams of protein to your morning breakfast. That being said, you can make this recipe with any type of milk and it will work just great!
Syrup: My favorite brand of syrup is called Choc Zero. I know you can buy it at Harmon’s but it may be at other places as well. This syrup tastes just the same as normal maple syrup but only has 35 calories, 15 grams of fiber, and 0g sugar. HOW?! I don’t know but it is my favorite thing these days!
Berries: Of course, you can substitute with any type of fruit - bananas, strawberries, blueberries, raspberries. But, I have to say, I love eating berries because they have so many good antioxidants and anti-inflammatory proteins in them. My husband always ask me which foods I think are the healthiest, and I would have to say berries have got to be one of the most nutrient-packed fruits!
Sweetening: Last tip, naturally these pancakes aren’t incredibly sweet. I would recommend adding something whether that is a touch of syrup, Greek yogurt and berries, or lemon juice and powdered sugar (a European favorite).
Are Kodiak Cakes Healthy?
I’ve gotten this question a lot recently! I think the Kodiak Cakes Buttermilk pancake mix is are healthy for a few reasons:
1) Yes, they have 30g of carbs, but that is NOT a bad thing!! The carbs that are in Kodiak Cakes come from 100% whole grains and, have 5g of fiber per serving. When compared to a normal Bisquick pancake mix, Bisquick has roughly 30g of carbs but hardly any of those are from whole grains and there is no fiber in that. Kodiak Cakes are also low in sugar, only 3g.
2) They are high in protein. In one serving, which makes about 3 pancakes, there is 14g of protein. That is equivalent to 2oz of animal protein. Great for pancakes! Bisquick for example only has 3g protein. That means Kodiak Cakes has is almost 5x the amount!
3) Other than that, there is a good amount of healthy fats and Kodiak Cakes are are also fortified with some iron and calcium which is great!

INGREDIENTS
2 tbsp coconut oil
1 1/2 cup Kodiak Cakes Buttermilk Mix
1 1/2 cup Fairlife Milk (see notes)
2 eggs
1 cup egg whites
1 tsp vanilla
1/2 tsp cinnamon
Optional toppings: fresh or frozen berries, greek yogurt, powdered sugar, Walden Farms (sugar-free) Pancake Syrup, Choc Zero syrup.
INSTRUCTIONS
Preheat the oven to 425 F degrees. In a 9x13 baking dish add coconut oil and place in the preheating oven. Once coconut oil is melted or after about 5 minutes,, remove the baking dish and spray the edges with cooking spray.
While coconut oil is melting, in a blender combine the Kodiak Cakes mix, Fairlife milk, eggs, egg whites, vanilla and cinnamon. Mix until combined.
After the coconut oil is melted, pour the blended mixture on top of the melted coconut oil and return to the oven to bake for 20-22 minutes.
Optional: top with fresh or frozen berries, greek yogurt, powdered sugar or Walden Farms Syrup. Enjoy!!
