VEGAN SWEET POTATO BROWNIES

Fudgy dark chocolate brownies, made with sweet potatoes and sweetened with cacao powder. Whether you eat the brownie batter plain or make them into brownies, these brownies are especially good with a nut butter swirl. Not only are these brownies naturally sweetened but they contain NO sugar, flour, butter, are dairy free and gluten free. Enjoy!

Sweet Potato Brownies

INGREDIENTS

1 1/2 cup mashed sweet potatoes (about 2 medium sweet potatoes)
1/3 cup smooth peanut butter
2 eggs OR flax eggs (2 tbsps ground flaxseed meal + 5 tablespoon water. Let sit for 15 min-this is key!)
1 tsp vanilla extract
1/4 cup cocoa powder
1/4 tsp baking soda
1/2 cup chocolate chips (divided in half)

INSTRUCTIONS

  1. Preheat the oven to 350 F degrees, and prepare an 8x8 baking pan by lining with parchment paper.

  2. Using a fork, poke holes in the sweet potatoes. On a microwave safe plate, microwave the sweet potatoes for 6-7 minutes, flipping at 3 minutes.

  3. If making vegan brownies, make the flax eggs. Combine the flaxseed meal and water. Let it sit for 15 min to thicken up.

  4. Let the potatoes cool, then peel the skin off. They should be easy to peel after they are cooked.

  5. Once peeled, mash the sweet potatoes with a potato masher or two forks.

  6. In a large mixing bowl, combine mashed sweet potatoes, peanut butter, eggs, and vanilla. Mix until completely combined.

  7. Next, add the cacao powder and baking soda. Mix until combined.

  8. Lastly, fold in half of the chocolate chips (1/4 cup) with a spatula.

  9. Pour the brownie batter mixture into the prepared baking dish. Sprinkle with the remaining 1/4 cup of chocolate chips.

  10. Bake for 22-25 minutes. Sprinkle with sea salt. Eat warm or wait until it cools to cut into squares. Enjoy!
