COTTAGE CHEESE TOAST

This high-protein cottage cheese toast will soon be your new favorite breakfast, snack, or night-time treat! When whipped, cottage cheese tastes very similar to cream cheese! Imagine that, high protein cream cheese with cinnamon, berries, nuts, or your choice of fruit . . . yum! Usually the texture of cottage cheese is what makes people steer clear from this protein-packed food, but even if that is the case for you, this recipe will finally help you eat it without having to muster through its strange texture.

This balanced recipe includes a serving of whole grains, is very high in protein, and depending on how you make it you are most likely getting in a good amount of vitamins and minerals, and possibly some heart-healthy nuts. INGREDIENTS

1 slice Whole Wheat Bread (I love Dave’s bread, but use whatever you love!)
1/3 cup cottage cheese
1/2 cup sliced fruit (peaches and berries are my favorite)
Nuts of your choice (optional)

INSTRUCTIONS

  1. Toast your bread to your liking.

  2. While the bread is toasting, blend the cottage cheese in a blender or a food processor. Blend until whipped, or no chunks are visible, about 2-3 minutes.

  3. Next, spread the whipped cottage cheese on top of the toasted bread. Top with your choice of fruit, nuts, or honey, if desired. Enjoy!
